The Age of Exploration was history's biggest ingredient swap meet, as ships crossing the Atlantic and Indian Oceans carried tomatoes, potatoes, chili peppers, and cacao to Europe while bringing wheat, livestock, and sugarcane to the Americas. European sailors relied on hardtack, salted meat, and dried fish to survive months at sea, while the spice trade in cinnamon, pepper, nutmeg, and cloves drove entire voyages and fortunes.
This era's food story is really the story of the Columbian Exchange reshaping diets on every continent it touched. New World crops like maize and potatoes eventually became staples across Europe, Africa, and Asia, while Old World livestock and grains transformed farming in the Americas.
