Ingredients

  • 185g (1 cup) Rice
  • 960ml (4 cups) Milk
  • 150g (3/4 cup) Sugar
  • 1 strip lemon or orange peel
  • 1 cinnamon stick
  • 4 egg yolks
  • Ground cinnamon, to garnish

Method

  1. Combine the rice with a little water in a saucepan and simmer for 10 minutes until the water is mostly absorbed.
  2. Add the milk, sugar, citrus peel and cinnamon stick, and continue simmering, stirring frequently, for
  3. –25 minutes until the rice is very tender and the mixture has thickened.
  4. Remove the peel and cinnamon stick.
  5. Temper the egg yolks with a little of the hot mixture, then stir back into the pan.
  6. Cook over low heat for a further 2–3 minutes, stirring constantly, until slightly thickened (do not boil after adding the eggs).
  7. Pour into a serving dish and dust with ground cinnamon, often in a decorative pattern, before serving warm or chilled.
