Ingredients
- Large jar pickled cabbage leaves — 1 (or 1 fresh cabbage, blanched)
- Minced pork — 500 g (1 lb 2 oz)
- Rice — 90 g (3 oz)
- Onion, finely chopped — 1
- Tomato paste — 2 tbsp
- Paprika — 1 tsp
- Dried thyme — 1 tsp
- Tomato juice or crushed tomatoes — 480 ml (16 fl oz)
- Bay leaves — 2
- Smoked bacon or ham hock, for extra flavour (optional)
- Salt and pepper — to taste
- Sour cream and polenta, to serve
Method
- Separate the cabbage leaves, trimming any thick stems.
- Combine the minced pork, rice, onion, tomato paste, paprika, thyme, salt and pepper for the filling.
- Place a spoonful of filling near the base of each cabbage leaf, fold in the sides, and roll up tightly.
- Line the bottom of a large pot with a few extra cabbage leaves and any bacon or ham hock.
- Arrange the rolled sarmale snugly in layers in the pot.
- Pour over the tomato juice, add the bay leaves, and add enough water to just cover.
- Cover and simmer very gently for 2–2.5 hours until the cabbage is very tender and the filling is fully cooked.
- Serve hot with sour cream and polenta (mămăligă) on the side.
