The Aztec Empire built one of history's most sophisticated food systems around the humble but mighty trio of corn, beans, and squash, grown on chinampas—engineered floating gardens that made Tenochtitlan's swampy setting remarkably productive. Chili peppers, tomatoes, and cacao added heat and richness, while amaranth and spirulina-rich lake algae supplied protein that supplemented a diet where meat, largely turkey and dog, was relatively limited.

Cacao held special status as a drink reserved for nobility and warriors, often spiced with chili and vanilla rather than sweetened. Markets like the famous one at Tlatelolco moved an enormous variety of produce daily, and Aztec cuisine's foundational ingredients—corn, beans, chocolate, tomatoes, and chili—went on to become some of the most globally influential foods to ever emerge from the Americas.
