Ingredients

  • Fresh nopal cactus paddles, spines removed, diced — 500 g (1.1 lb)
  • Small white onion, finely chopped — 1
  • Medium tomatoes, diced — 2
  • Fresh serrano chili, finely chopped — 1
  • Fresh cilantro, chopped — 2 tbsp
  • Fresh lime juice — 1 tbsp
  • Fine salt — 1/2 tsp
  • Crumbled queso fresco, for serving (optional) — 1 tbsp

Method

  1. Bring a saucepan of salted water to the boil and add the diced nopal.
  2. Boil for 8-10 minutes until tender but still with a slight bite, then drain in a colander and rinse briefly under cool water to remove the natural sliminess.
  3. Allow the nopal to drain and cool completely.
  4. In a mixing bowl, combine the cooled nopal, onion, tomatoes and chili.
  5. Add the cilantro, lime juice and salt, and toss gently to combine.
  6. Scatter with crumbled queso fresco if using, and serve chilled or at room temperature.

Introduction: Diced cactus paddles boiled tender and tossed with tomato, onion and chili, this refreshing salad made use of the nopal cactus, a plant deeply woven into Mexica life and imagery.

Cultural Background: The nopal cactus held deep symbolic significance for the Mexica, appearing in the founding legend of Tenochtitlan itself, in which an eagle was seen perched on a nopal. Beyond its symbolic weight, the plant’s fleshy paddles were a practical and nutritious everyday vegetable, prepared simply as a cooling salad to accompany richer dishes.

Tips: Rinsing the boiled nopal briefly under cool water helps reduce its natural mucilaginous texture, which some diners prefer minimised. Fresh nopal paddles with the spines already removed are increasingly available in Latin American grocery stores, saving preparation time.

Variations: Add a small diced avocado just before serving for a creamier, richer version. Toasted pumpkin seeds scattered over the top add extra crunch and protein.

Storage: Store in an airtight container in the refrigerator for up to 2 days; the salad softens somewhat over time.

Reheating: This is a cold or room-temperature dish and does not require reheating.

FAQs:

Q: How do I safely prepare fresh nopal paddles?

A: Using a sharp knife, carefully shave off the small spine clusters from both sides and the edges of the paddle before dicing; pre-cleaned paddles are also widely sold.

Q: Why is nopal slimy and how do I reduce it?

A: Nopal contains a natural mucilage similar to okra; boiling it and then rinsing briefly under cool water reduces this texture considerably.
