Ingredients
- 900 g (2 lb) chicken pieces, bone-in
- 30 ml (2 tbsp) lime juice (for cleaning chicken)
- 20 g (1.5 tbsp) brown sugar
- 30 ml (2 tbsp) vegetable oil
- 1 (1) onion, chopped
- 1 (1) sweet pepper, chopped
- 3 (3) garlic cloves, minced
- 30 g (2 tbsp) tomato paste
- 300 ml (1 1/4 cups) chicken stock
- 3 (3) thyme sprigs
- 600 g cooked (3 cups cooked) white rice, cooked
Method
- Rub chicken with lime juice and rinse; pat dry and season with salt and pepper.
- Heat oil in the pot, add sugar and caramelise to a dark amber colour.
- Add chicken, browning on all sides in the caramel, about 8 minutes.
- Add onion, sweet pepper and garlic; cook 4 minutes.
- Stir in tomato paste, cook 2 minutes, then add stock and thyme.
- Cover and simmer on low heat 30 minutes until chicken is tender and gravy has thickened.
- Serve hot over cooked white rice.
