Ingredients
- Large pickled cabbage, leaves separated — 1
- Minced pork — 500 g (1 lb 2 oz)
- Smoked pork, finely chopped — 150 g (5 oz)
- Rice — 3/4 cup (150 g / 5 oz)
- Onion, finely chopped — 1
- Carrot, grated — 1
- Tomato paste — 2 tbsp
- Paprika — 1 tsp
- Meat stock — 3 cups (720 ml / 24 fl oz)
- Oil — 2 tbsp
- Fresh thyme — 1 sprig
- Salt and pepper — to taste
- Sour cream and hot polenta (mămăligă), to serve
Method
- Rinse the pickled cabbage leaves lightly if very salty.
- Combine the minced pork, smoked pork, rice, onion, carrot, paprika, salt and pepper in a bowl.
- Place a spoonful of filling on each cabbage leaf and roll up tightly, tucking in the sides.
- Arrange the rolls seam-side down in a large pot, layering with the thyme sprig.
- Mix the tomato paste with the stock and pour over the rolls.
- Cover and simmer gently for 2–2.5 hours until the rice and meat are fully cooked and the flavours have melded.
- Serve hot with mămăligă and sour cream, traditionally as part of the Christmas meal.
