  • - 1 tbsp vegetable oil
  • - 1/2 onion, finely diced
  • - 2 cloves garlic, minced
  • - 400 ml (14 oz) coconut milk
  • - 200 ml (3/4 cup plus 1 tbsp) water
  • - 2 sprigs fresh thyme
  • - 1 scotch bonnet pepper, whole and pierced
  • - Salt and black pepper, to taste

Method

  1. Heat the oil in a saucepan over medium heat and sauté the onion for 3-4 minutes until softened. Add the garlic and cook for 30 seconds.
  2. Add the pigeon peas and stir to combine, cooking for 1-2 minutes.
  3. Pour in the coconut milk and water, then add the thyme and whole scotch bonnet. Bring to a boil.
  4. Stir in the rinsed rice, season with salt and pepper, and return to a boil.
  5. Reduce the heat to low, cover tightly, and simmer for 18-20 minutes without lifting the lid, until the rice is tender and the liquid is absorbed.
  6. Remove from heat, discard the scotch bonnet and thyme stems, and let stand covered for 5 minutes. Fluff with a fork before serving.
