  • Salt — 1 tsp
  • Grated coconut — 200 g (2 cups)
  • Coconut milk — 300 ml (1 1/4 cups)
  • Egg — 1
  • Butter, softened — 40 g (3 tbsp)

Method

  1. Combine the flour, yeast, sugar and salt in a bowl.
  2. Stir in the grated coconut.
  3. Add the coconut milk and egg, mixing to form a soft dough.
  4. Knead in the butter gradually until smooth and elastic, about 10 minutes.
  5. Cover and let rise in a warm place for 1 hour until doubled.
  6. Shape into a loaf and place in a greased loaf tin.
  7. Cover and let rise a further 30 minutes.
  8. Preheat the oven to 180°C (350°F).
  9. Bake for 35-40 minutes until golden and a skewer comes out clean.
