Ingredients

  • - 1 whole chicken (about 1.5kg / 3 lb), cut into pieces
  • - 2 litres (8 cups) water
  • - 1 tsp salt, plus more to taste
  • - 1 tsp whole black peppercorns
  • - 4 large onions, thinly sliced
  • - 6 garlic cloves, minced
  • - 2 tbsp vegetable oil
  • - 125ml (1/2 cup) white vinegar
  • - 2 bay leaves
  • - 1/2 tsp dried oregano
  • - 2 hard-boiled eggs, sliced, to serve
  • - Corn tortillas, to serve

Method

  1. Place the chicken in a large stockpot with the water, salt and peppercorns. Bring to a boil, skim off any foam, then reduce to a simmer and cook for 40 minutes until the chicken is tender.
  2. Lift out the chicken, shred the meat from the bones, and return the meat to the pot. Discard the bones and skin.
  3. Meanwhile, heat the oil in a frying pan over medium heat and cook the onions and garlic slowly for 12-15 minutes until soft and translucent but not browned.
  4. Add the vinegar, bay leaves and oregano to the onions and simmer for 5 minutes, then stir the whole mixture into the chicken broth.
  5. Simmer everything together for a further 10 minutes, then season with salt to taste.
  6. Ladle into bowls, top with hard-boiled egg slices, and serve with warm corn tortillas.
