Chibwabwa (Pumpkin Leaves in Ground Peanut Sauce)

Ingredients
- Pumpkin leaves, washed and finely shredded — 500 g (about 7 cups packed)
- Raw groundnuts (peanuts), pounded or ground — 100 g (2/3 cup)
- Small Onion, finely chopped — 1
- Medium Tomato, chopped — 1
- Cooking oil — 15 ml (1 tbsp)
- Water — 250 ml (1 cup)
- Salt — to taste
- Bicarbonate of soda, optional (traditional tenderiser) — a small pinch
Method
- Heat the oil in the saucepan and fry the onion until soft, about 3–4 minutes.
- Add the tomato and cook for 3–4 minutes until it breaks down into a light sauce.
- Stir in the shredded pumpkin leaves, water, salt and the pinch of bicarbonate of soda (if using).
- Cover and simmer for 10 minutes, stirring occasionally.
- Stir in the ground groundnuts, then cover again and simmer for a further 8–10 minutes until the leaves are very tender and the sauce has thickened to coat them.
- Taste, adjust salt, and serve hot as a side relish.
