Ingredients

  • - 700 g (1.5 lb) cassava leaves, finely pounded or minced
  • - 300 g (10 oz) smoked fish, flaked and bones removed
  • - 300 g (10 oz) beef, cut into chunks
  • - 4 tbsp palm oil
  • - 1 large onion, chopped
  • - 3 garlic cloves, minced
  • - 1 tbsp ginger, grated
  • - 600 ml (2.5 cups) beef stock
  • - 1 Scotch bonnet chilli, whole
  • - 1 tsp ground crayfish
  • - 1 tsp salt, or to taste

Method

  1. Heat the palm oil in a large pot and brown the beef on all sides, about 8 minutes.
  2. Add the onion, garlic and ginger, and cook for 5 minutes until fragrant.
  3. Pour in the beef stock and add the whole chilli, then bring to a boil.
  4. Reduce heat, cover and simmer for 40 minutes until the beef is tender.
  5. Stir in the pounded cassava leaves, smoked fish, ground crayfish and salt.
  6. Cover and simmer for a further 25-30 minutes, stirring occasionally, until rich and thickened.
  7. Remove the whole chilli and serve hot with rice, fufu or gozo as the centrepiece of the festive meal.
