Ingredients
- 250 g (1.25 cups) Dried pigeon peas, soaked overnight (or canned)
- 1 small Onion, chopped
- 2 cloves Garlic, minced
- 1 medium Tomato, chopped
- 2 tbsp Olive oil
- 1 Bay leaf

- 500 ml (2 cups) Water or stock
Method
- If using dried pigeon peas, drain the soaked peas and boil in fresh water for 45–50 minutes until tender; drain and set aside. If using canned, simply drain and rinse.
- Heat the olive oil in a saucepan and sauté the onion and garlic until soft.
- Add the tomato and bay leaf, and cook for 5 minutes until the tomato breaks down.
- Add the cooked peas and water or stock, and simmer for 15–20 minutes until the sauce thickens slightly.
- Season to taste and serve warm alongside rice or fish.
