Ingredients

  • - 1 whole chicken (about 1.5 kg / 3.3 lb)
  • - 4 cloves garlic, minced
  • - 1 thumb-sized piece ginger, grated
  • - 2 tbsp vegetable oil
  • - 1 tbsp tomato paste
  • - 1 tsp paprika
  • - 1 tsp chilli powder
  • - 1 tsp ground cumin
  • - 1 tsp dried thyme
  • - 1 1/2 tsp salt
  • - 2 tbsp lime juice
  • - 1 onion, quartered (for the cavity)

Method

  1. In a bowl, combine garlic, ginger, oil, tomato paste, paprika, chilli powder, cumin, thyme, salt and lime juice into a thick marinade paste.
  2. Rub the marinade all over the chicken, including under the skin and inside the cavity. Stuff the cavity with the quartered onion.
  3. Cover and refrigerate for at least 4 hours, ideally overnight, to let the flavours penetrate.
  4. Preheat the oven to 200°C (400°F). Remove the chicken from the fridge 30 minutes before roasting.
  5. Place the chicken in a roasting pan and roast for 1 hour to 1 hour 15 minutes, basting with pan juices every 20 minutes, until the internal temperature reaches 75°C (165°F) at the thickest part of the thigh.
  6. Rest the chicken for 10-15 minutes before carving and serving.
