Ingredients

- - 150g (3/4 cup) sugar
- - 200g (2 cups) freshly grated coconut, or unsweetened desiccated coconut
- - 60g (1/4 cup) butter, melted
- - 300ml (1 1/4 cups) coconut milk
- - 1 large egg
- - 1 tsp vanilla extract
Method
- Preheat the oven to 175C (350F) and grease and line the loaf tin with parchment paper.
- Whisk together the flour, baking powder, salt and sugar in a large bowl. Stir in the grated coconut.
- In a separate bowl or jug, whisk together the melted butter, coconut milk, egg and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir just until combined; do not overmix.
- Pour the batter into the prepared loaf tin and smooth the top.
- Bake for 55-65 minutes, until a skewer inserted in the centre comes out clean and the top is golden brown.
- Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
