Method
- Preheat the oven to 175°C (350°F) and grease a baking dish.
- Combine the grated cassava, grated coconut and sugar in a large bowl.
- In a separate bowl, beat the coconut milk, eggs, vanilla, nutmeg and salt.
- Combine the wet and dry ingredients, mixing until well combined.
- Pour the batter into the prepared baking dish, smoothing the top.
- Bake for 60-70 minutes until golden and set, with a slight firmness to the touch.
- Cool for at least 20 minutes before slicing and serving.
