Ingredients
- Goat meat, bone-in, cut into pieces — 1.2 kg (2.6 lb)
- Onions, chopped — 2
- Garlic, minced — 4 cloves
- Ginger, minced — 2 tbsp
- Curry powder — 3 tsp
- Turmeric — 1 tsp
- Tomatoes, chopped — 2
- Curry leaves — 2 sprigs
- Thyme — 1 sprig
- Oil — 4 tbsp
- Water — 3 cups (720 ml / 24 fl oz)
- Salt — to taste
Method
- Heat the oil in a large pot and brown the goat pieces in batches; set aside.
- In the same pot, sauté the onions until golden.
- Add the garlic, ginger and curry leaves, frying until fragrant.
- Stir in the curry powder and turmeric, cooking briefly to toast.
- Return the goat to the pot along with the chopped tomatoes and thyme, and cook for 5 minutes.
- Add the water, bring to a boil, then cover and simmer over low heat for 1.5–2 hours until the meat is very tender.
- Season with salt and serve hot with rice.
