Ingredients

  • Medium (about 300 g) Ripe bananas, mashed — 3
  • Sweet potato, boiled, peeled and mashed — 150 g (2/3 cup)
  • All-purpose flour — 300 g (2 1/2 cups)
  • Sugar — 150 g (3/4 cup)
  • Butter or margarine, softened — 100 g (1/2 cup)

  • Baking powder — 8 g (2 tsp)
  • Ground cinnamon — 3 g (3/4 tsp)

Method

  1. Preheat the oven to 175°C (350°F) and grease the loaf tin.
  2. Cream the butter and sugar together in a large bowl until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the mashed banana and mashed sweet potato until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon and salt.
  5. Fold the dry ingredients into the wet mixture until just combined, taking care not to overmix.
  6. Pour the batter into the prepared tin and smooth the top.
  7. Bake for 50–60 minutes, until a skewer inserted into the centre comes out clean and the top is golden brown.
  8. Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely before slicing thickly.
