Ingredients
- 1.5 kg (3.3 lb) pork loin or veal roast, boned and rolled
- 2 tbsp mustard
- 3 garlic cloves, crushed

- 300 ml (1 1/4 cups) beef or chicken stock

Method

- Remove from the oven, tent loosely with foil, and rest for 15-20 minutes before carving.
- Serve slices with the roasted vegetables and pan juices spooned over.
