Coconut Rice with Kidney Beans (Rice and Peas)

Ingredients
- 400 g (2 cups) long-grain rice
- 1 can (400 g / 14 oz) kidney beans, drained (liquid reserved)
- 400 ml (1 3/4 cups) coconut milk
- 2 sprigs fresh thyme
- 2 scallions, whole
- 1 scotch bonnet pepper, whole
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
Method
- Combine coconut milk, reserved bean liquid, thyme, scallions, scotch bonnet and garlic in a pot and bring to a simmer.
- Add the kidney beans and simmer 5 minutes to infuse the liquid.
- Stir in rinsed rice, salt and pepper.
- Cover and cook on low heat for 20-25 minutes until the rice is tender and liquid is absorbed.
- Remove the whole scotch bonnet and scallions before fluffing and serving.
