Ingredients

Method
- Whisk flour, cornflour, yeast and warm water into a smooth, pourable batter; let ferment in a warm place for 2-3 hours until bubbly.
- Steep the saffron in a tablespoon of warm water and stir into the fermented batter.
- Make the syrup by simmering sugar, water and lemon juice for 10 minutes until slightly thickened; keep warm.
- Heat oil in a deep pan to 175°C (350°F).
- Transfer the batter to a piping bag and pipe overlapping spirals directly into the hot oil.
- Fry for 2-3 minutes per side until golden and crisp.
- Immediately transfer the hot zlabia into the warm syrup, soaking for 1-2 minutes.
- Remove and drain briefly before serving.
