Ingredients

  • - 500g Rye flour
  • - 150g Active rye sourdough starter
  • - 320ml Warm water
  • - 1.5 tsp Salt
  • - 1 tbsp Caraway seeds
  • - 1 tbsp Honey or molasses

Method

  1. Combine the rye flour, sourdough starter, warm water, salt, caraway seeds and honey in a large bowl.
  2. Mix and knead briefly in the bowl until a sticky, cohesive dough forms; rye dough will not become smooth and elastic like wheat dough.
  3. Transfer the dough to a greased loaf tin, smoothing the top with wet hands.
  4. Cover with a damp tea towel and leave to rise in a warm place for 3-4 hours until visibly puffed.
  5. Preheat the oven to 200C (400F).
  6. Bake for 45-50 minutes until the crust is deep brown and the loaf sounds hollow when tapped on the base.
  7. Cool completely on a wire rack before slicing, ideally for several hours, to let the crumb set.
