- - 300 g (2 1/2 cups) plain flour

Method
- Chop the jellied stock into small cubes and mix into the minced pork along with the Shaoxing wine, soy sauce, ginger, sugar and salt. Chill the filling for 30 minutes.
- Make the dough by combining flour and warm water into a smooth, firm dough; rest for 20 minutes.
- Roll the dough into a long log and cut into small pieces, then roll each piece into a thin round wrapper, slightly thicker in the centre.
- Place a spoonful of chilled filling in the centre of each wrapper, then pleat the edges upward and twist to seal into a small purse shape.
- Arrange the dumplings in a lined bamboo steamer, leaving space between each, and steam over boiling water for 8-10 minutes.
- Serve immediately with black vinegar and shredded ginger for dipping.
