Vary Amin’Anana

Ingredients
- 400g (2 cups) Rice
- 450g (1 lb) Beef, cubed
- 4 cups Leafy greens (mustard greens or spinach), shredded
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Tomato, chopped
- 30ml (2 tbsp) Vegetable oil
- 1 tsp Salt
- 1/2 tsp Black pepper
- 950ml (4 cups) Water or beef broth
Method
- Heat the oil in a large pot and brown the beef cubes on all sides.
- Add the onion and garlic and cook until softened.
- Stir in the tomato, salt, and pepper, and cook for 3 minutes.
- Pour in the water or broth and simmer, covered, for 20 minutes until the beef is tender.
- Add the rice and shredded greens to the pot.
- Simmer uncovered, stirring occasionally, for 15 to 20 minutes until the rice is fully cooked and the mixture is thick.
- Adjust seasoning and serve hot.
