Ingredients
- Whole pig (approx. 20–25 kg / 44–55 lb), cleaned and prepared — 1
- Assorted root vegetables (yam, taro, breadfruit), as available
- Sea salt, to season generously
- Banana leaves, for lining and covering
- River stones, for heating
- Firewood, for heating stones
Method
- Dig a pit large enough to hold the pig and vegetables, and heat a generous layer of stones over a large fire until very hot.
- Season the cleaned pig generously with sea salt.
- Line the bottom of the heated pit with hot stones, then a layer of banana leaves.
- Place the pig on top, arranging the root vegetables around it.
- Cover with more banana leaves, then a final layer of hot stones.
- Cover the entire pit with earth or a heavy tarp to seal in the heat and steam.
- Leave to cook undisturbed for 4–6 hours, depending on size, until the meat and vegetables are fully tender.
- Carefully uncover, remove the banana leaves, and serve to the gathered community.
