Ingredients
- 1 whole turkey (about 4 kg / 8.8 lb), for roasting
- 400g (4 cups) Fresh cranberries
- 200g (1 cup) Sugar or molasses, for cranberry sauce
- 450g (3 cups) Corn kernels, for succotash
- 450g (3 cups) Lima beans, for succotash
- 1 small pumpkin, for stewed pumpkin (about 800 g / 1.75 lb)
- 2 tbsp butter, for pumpkin
- Salt and pepper to taste
Method
- Roast the turkey following standard preparation (season, truss, roast at 160°C / 325°F for about 3–3.5 hours, basting occasionally, until fully cooked); let rest before carving.
- For the cranberry sauce, simmer the cranberries with the sugar or molasses and a little water for
- –20 minutes until thickened and the berries have burst.
- For the succotash, simmer the corn and lima beans together with a little butter until tender, about 20 minutes.
- For the stewed pumpkin, peel, cube and simmer the pumpkin in a little water until tender, then mash with butter and season.
- Arrange all the dishes together for the gathered harvest celebration.
