  • Pork, cut into large pieces — 2 kg (4.4 lb)
  • Taro, peeled and cut into chunks — 1 kg (2.2 lb)
  • Taro leaves, chopped — 500 g (1 lb 2 oz)
  • Coconut cream — 960 ml (32 fl oz)
  • Onions, chopped — 2
  • Salt — to taste
  • Banana leaves, for lining

Method

  1. Preheat the oven to 160°C (325°F).
  2. Season the pork with salt and roast, covered, for 2.5–3 hours until very tender.
  3. Meanwhile, boil the taro chunks in salted water until tender, about 25 minutes; drain.
  4. Simmer the chopped taro leaves and onion in coconut cream over low heat for 35–40 minutes until tender.
  5. Arrange the roasted pork, boiled taro and coconut cream taro leaves together on a large banana leaf-lined platter for sharing among the gathered family.
