Ingredients
- Bread flour — 300 g (2 1/2 cups)
- Fine semolina, plus extra for dusting — 200 g (1 1/3 cups)
- Instant yeast — 7 g (2 1/4 tsp)
- Salt — 1 1/2 tsp
- Warm water — 320 ml (1 1/3 cups)
- Olive oil — 2 tbsp (30 ml)
Method
- Mix the flour, semolina, yeast and salt in a large bowl. Add the warm water and oil, and mix into a rough dough.
- Turn out onto a lightly floured surface and knead for 10 minutes until smooth and slightly tacky.
- Place in an oiled bowl, cover, and let rise in a warm place for about 1 hour, until doubled.
- Punch down the dough and divide into 4 pieces. Shape each into a round, flat loaf about 15 cm (6 in) across and 2 cm (3/4 in) thick, dusting generously with semolina.
- Place on a baking tray or stone, cover loosely, and let rise for a further 25–30 minutes.
- Bake at 230°C (450°F), ideally on a preheated baking stone, for 15–18 minutes until golden brown and hollow-sounding when tapped.
- Cool on a wire rack for at least 10 minutes before slicing.
