Method
- Preheat the oven to 175°C (350°F) and grease and line the loaf tin.

- In a separate large bowl, whisk the sugar, eggs, oil and vanilla until smooth, then stir in the mashed sweet potato until well combined.
- Fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared loaf tin and smooth the top.
- Bake for 55-60 minutes until a skewer inserted into the centre comes out clean.
- Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely before slicing.
