Method

  1. Place the potatoes and carrots in a large pan of salted water, bring to a boil, and cook together for 18–20 minutes until both are tender.
  2. Meanwhile, gently fry the onion in half the butter until soft and lightly golden.
  3. Drain the potatoes and carrots well and return to the pan over low heat for 1 minute to dry out any excess moisture.
  4. Mash roughly with a potato masher — stoemp should keep some texture, not be silky smooth.
  5. Stir in the remaining butter, warmed milk and fried onions. Season generously with salt and pepper.
  6. Serve hot alongside sausages, bacon or a fried egg.
