Ingredients

  • Plain flour — 4 cups (500 g / 1 lb 2 oz)
  • Warm water — 1.5 cups (360 ml / 12 fl oz)
  • Active dry yeast — 2 tsp
  • Sugar — 1 tsp
  • Salt — 2 tsp
  • Oil — 2 tbsp
  • Egg, beaten, for glazing — 1

Method

  1. Dissolve the yeast and sugar in the warm water and let sit for 10 minutes until foamy.
  2. Combine the flour and salt in a large bowl, then add the yeast mixture and oil.
  3. Mix and knead for 10 minutes until smooth and elastic.
  4. Cover and let rise in a warm place for 1–1.5 hours, or until doubled in size.
  5. Shape the dough into a round loaf and place on a baking tray.
  6. If available, use a traditional stamp to press a religious symbol into the centre of the loaf, or decorate with small dough shapes such as a cross or braid.
  7. Let rise for a further 30 minutes.
  8. Brush with beaten egg.
  9. Preheat the oven to 190°C (375°F) and bake for 30–35 minutes until deeply golden.
  10. Present the finished bread for the family's slava ceremony, where it is traditionally blessed and ceremonially cut before being shared.
