Ingredients
- - 500 g (4 cups) plain flour
- - 200 g (7/8 cup) butter, softened, plus extra melted butter for layering
- - 1 egg
- - 150 ml (2/3 cup) warm water
- - 1 tsp active dry yeast
- - 1/2 tsp salt
- - 2 onions, finely diced
- - 2 tbsp vegetable oil
- - 1 tsp ground turmeric
- - 1/2 tsp ground cinnamon
- - 1/4 tsp ground cardamom
- - 1/4 tsp ground black pepper
- - 1 egg yolk, beaten, for egg wash
- - 1 tbsp sesame or nigella seeds
Method
- Dissolve yeast in warm water and rest 10 minutes until foamy.
- Rub the softened butter into the flour and salt, then mix in the yeast water and egg to form a soft dough.
- Rest, covered, for 1 hour.
- Meanwhile, saute the onions in oil until deeply golden, then stir in turmeric, cinnamon, cardamom and pepper, and cook a further 2 minutes. Cool completely.
- Roll the dough into a large thin rectangle, brush generously with melted butter, and fold into thirds; repeat this rolling and folding twice more to build flaky layers.
- Roll out again, spread the cooled spiced onion filling evenly over the surface, and roll up tightly into a log.
- Slice the log into rounds, place cut-side up on a baking tray, and press gently to flatten slightly.
- Brush with egg yolk, scatter with seeds, and bake at 190C (375F) for 20-25 minutes until deep golden and flaky.
