  • - 200 g (2 cups) thin vermicelli (shemai), broken into short pieces
  • - 3 tbsp ghee
  • - 1 litre (4 cups) whole milk
  • - 100 g (1/2 cup) sugar
  • - 4 green cardamom pods
  • - 2 tbsp raisins
  • - 2 tbsp cashew nuts, chopped
  • - 2 tbsp almonds, sliced
  • - 1/4 tsp saffron strands, soaked in 1 tbsp warm milk (optional)

Method

  1. Heat the ghee in a heavy-bottomed pot over medium heat and fry the vermicelli, stirring constantly, until golden brown and fragrant, about 3-4 minutes.
  2. Pour in the milk and add the cardamom pods, stirring well.
  3. Bring to a gentle boil, then reduce heat and simmer for 10-12 minutes, stirring occasionally, until the vermicelli is soft and the milk has thickened slightly.
  4. Stir in the sugar, raisins, cashews and almonds, and simmer for a further 3-4 minutes.
  5. Stir in the saffron milk, if using, for extra colour and fragrance.
  6. Remove from heat and let rest for a few minutes to thicken further before serving warm or chilled.
