- Soy sauce — 3 tbsp
- Water — 1 tbsp

- Mash the cooked rice with the salt until it forms a cohesive, slightly sticky mass.
- Press the mixture thinly onto a lightly oiled baking tray, or shape into thin discs by hand.
- Let dry slightly for 20-30 minutes.
- Grill or bake at a moderate heat (around 180°C) for 10-12 minutes, until firm and beginning to crisp, flipping once.
- Combine the soy sauce and water and brush over the crackers.
- Return to the heat briefly to dry and lightly char the glaze before serving.
