  • All-purpose flour — 500 g (4 cups)
  • Instant yeast — 7 g (2 1/4 tsp)
  • Sugar — 1 tsp
  • Salt — 1 tsp
  • Warm water — 300 ml (1 1/4 cups)
  • Olive oil — 2 tbsp

Method

  1. Combine the flour, yeast, sugar and salt in a bowl.
  2. Add the warm water and olive oil, mixing to form a soft dough.
  3. Knead for 8-10 minutes until smooth and elastic.
  4. Cover and let rise in a warm place for 1 hour until doubled.
  5. Divide into 8 pieces and roll each into a round about 5 mm thick.
  6. Preheat a heavy skillet over high heat, or the oven with a baking stone to 250°C (480°F).
  7. Cook each round for 1-2 minutes per side on the skillet, or bake for 3-4 minutes in the oven, until puffed and lightly golden.
  8. Wrap in a clean cloth to keep soft while cooking the remaining bread.
