Ingredients

  • Beef or chicken, diced small — 500 g (1 lb)
  • Potatoes, diced small — 2
  • Onion, finely chopped — 1
  • Aji panca or aji amarillo paste — 2 tbsp
  • Gelatin powder, bloomed in water — 1 tsp
  • Beef or chicken stock — 500 ml (2 cups)
  • Peas — 100 g (2/3 cup)
  • Green olives, halved — 12
  • Hard-boiled eggs, chopped — 2
  • Sugar — 1 tbsp
  • Flour (for dough) — 500 g (3 3/4 cups)
  • Lard or shortening — 100 g (1/2 cup)
  • Achiote (annatto) powder — 1 tsp
  • Warm water — 150 ml (2/3 cup)
  • Salt — 1 tsp

Method

  1. Cook the meat, onion and potato with the chilli paste, sugar and stock until the meat is tender.
  2. Stir the bloomed gelatin into the hot stew until dissolved, then stir in peas, olives and egg. Chill the filling until firm — this jelly-like set is what creates the broth once baked.
  3. For the dough, mix flour, salt and achiote powder, rub in the lard, then add warm water to form a smooth dough. Rest for 20 minutes.
  4. Roll the dough into circles, spoon in the chilled filling, and fold into the classic braided half-moon shape, sealing well.
  5. Bake at 200°C (400°F) for 20-25 minutes until golden.
  6. Cool for 5-10 minutes before eating; the filling will be very hot and liquid inside.
