  • - Fresh coriander, chopped, for garnish

Method

  1. Heat the oil in a large pot and brown the meat cubes on all sides.
  2. Add the onion and cook until softened, then stir in the garlic, baharat and turmeric for 1 minute.
  3. Add the tomatoes and tomato paste, stirring for 2-3 minutes until they break down slightly.
  4. Pour in the water or stock, season with salt and pepper, cover and simmer for 45 minutes until the meat is tender.
  5. Add the potato and carrot, simmer for 10 minutes, then add the courgette and green beans and cook for a further 10-12 minutes until all vegetables are tender.
  6. Adjust seasoning to taste and garnish with fresh coriander before serving hot over rice.
