Ingredients
- - 1 litre (4 cups) whole milk
- - 400ml (14 oz) sweetened condensed milk
- - 6 large egg yolks
- - 1 tsp vanilla extract
- - 1/2 tsp ground nutmeg, plus extra for serving
- - 1/4 tsp ground cinnamon
- - 180-250ml (3/4-1 cup) dark rum, to taste
Method
- Warm the milk gently in a saucepan over medium-low heat until just steaming, not boiling.
- In a separate bowl, whisk the egg yolks until smooth. Slowly pour in a ladle of the warm milk while whisking constantly, to temper the eggs.
- Pour the tempered egg mixture back into the saucepan with the remaining milk, whisking constantly.
- Cook over low heat, stirring constantly, for 5-8 minutes until the mixture thickens slightly enough to coat the back of a spoon. Do not let it boil.
- Remove from the heat and stir in the condensed milk, vanilla extract, nutmeg and cinnamon until fully combined.
- Strain through a fine sieve into a bowl or jug to remove any bits of cooked egg, then stir in the rum to taste.
- Cool completely, then bottle or pour into a pitcher and refrigerate for at least 24 hours before serving, dusted with extra nutmeg.
