Ingredients
- Long-grain rice — 2 cups (370 g / 13 oz)
- Saffron threads — 1/2 tsp
- Water or stock — 3 cups (720 ml / 24 fl oz)
- Butter — 2 tbsp
- Slivered almonds, toasted — 1/4 cup (35 g / 1.25 oz)
- Salt — to taste
Method
- Steep the saffron threads in 2 tablespoons of warm water for 10 minutes to release their colour and aroma.
- Rinse the rice under cold water until it runs mostly clear.
- Melt the butter in a saucepan and briefly sauté the rinsed rice for 2 minutes.
- Add the water or stock, saffron with its soaking liquid, and salt, and bring to a boil.
- Cover and reduce to low heat, cooking for 15–18 minutes until the rice is tender and the liquid absorbed.
- Let rest, covered, for 5 minutes, then fluff with a fork.
- Scatter with toasted slivered almonds before serving.
