Ingredients
- 450g (1 lb) Pork shoulder, cubed
- 4 cups Pounded cassava leaves (or finely chopped spinach as substitute)
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 30ml (2 tbsp) Vegetable oil
- 240ml (1 cup, optional, coastal-style) Coconut milk
- 1 tsp Salt
- 1/2 tsp Black pepper
- 240ml (1 cup) Water
Method
- Heat the oil in a large pot and brown the pork on all sides.
- Add the onion and garlic and cook until fragrant.
- Stir in the cassava leaves, salt, and pepper.
- Pour in the water, cover, and simmer for 45 minutes to an hour, stirring occasionally, until the pork is tender and the leaves are dark and soft.
- If using coconut milk, stir it in during the last 10 minutes of cooking.
- Serve hot over rice.
