Ingredients

  • - 1 whole free-range chicken (about 1.5 kg / 3.3 lb), spatchcocked
  • - 3 tbsp vegetable oil
  • - 4 cloves garlic, minced
  • - 1 tbsp fresh ginger, grated

  • - 1 tbsp tomato paste
  • - 1 tsp chilli powder, or to taste

  • - 1/2 tsp black pepper
  • - 1 lime, juiced

Method

  1. In a large bowl, mix the oil, garlic, ginger, mustard, tomato paste, chilli powder, salt, pepper, and lime juice into a marinade.
  2. Rub the marinade all over the spatchcocked chicken, working it under the skin where possible.
  3. Cover and refrigerate for at least 3 hours, ideally overnight.
  4. Preheat a charcoal grill or grill pan to medium heat.
  5. Grill the chicken skin-side down first for 12-15 minutes, then turn and continue grilling for a further 25-30 minutes, basting occasionally with any remaining marinade.
  6. Check the chicken is cooked through, with juices running clear and an internal temperature of 74°C (165°F), before removing from the heat.
  7. Rest for 5 minutes before carving and serving.
