Ingredients

Method

  1. Score the fish 2-3 times on each side to help the marinade penetrate.
  2. Mix the tamarind paste, garlic, ginger, chilli, oil and salt into a smooth paste.
  3. Rub the paste all over the fish, including inside the cavity, and marinate for at least 20 minutes.
  4. Heat the grill to medium-high (around 200C/400F equivalent) and oil the grates well.
  5. Grill the fish for 8-10 minutes per side, basting once with any remaining marinade, until the flesh flakes easily.
  6. Serve hot with lime wedges on the side.
