Ingredients

  • - 1.2kg Pork loin or shoulder joint
  • - 4 cloves Garlic, sliced
  • - 2 whole Onion, quartered
  • - 1.5 tsp Salt
  • - 1 tsp Black pepper, ground
  • - 2 leaves Bay leaves
  • - 2 tbsp Vegetable oil
  • - 150g Cranberry or lingonberry sauce, to serve
  • - 50g Prepared horseradish, to serve

Method

  1. Preheat the oven to 160C (325F).
  2. Using a small knife, make shallow incisions all over the meat and push a sliver of garlic into each one.
  3. Rub the meat all over with oil, salt and pepper.
  4. Place the meat in a roasting tin with the quartered onion and bay leaves scattered around it.
  5. Cover loosely with foil and roast for about 1.5 hours.
  6. Remove the foil and increase the oven temperature to 200C (400F); roast for a further 20-25 minutes until deeply golden and the internal temperature reaches 71C (160F).
  7. Rest the meat, covered loosely with foil, for 15 minutes before carving.
  8. Serve sliced, with cranberry or lingonberry sauce and horseradish alongside.
