Phala la Mpunga (Sweetened Rice Porridge)

Ingredients
- White rice, short or medium grain — 100 g (1/2 cup)
- Water — 500 ml (2 cups)
- Milk — 250 ml (1 cup)
- Sugar, or to taste — 40 g (3 tbsp)
- Cinnamon stick, optional — 1
- Salt — 1 pinch
Method
- Rinse the rice well under cold water until the water runs clear.
- Combine the rice, water, salt and cinnamon stick in the saucepan and bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes, stirring occasionally, until the rice is very soft.
- Mash the rice gently against the side of the pan with the spoon to break it down into a thick, semi-smooth porridge.
- Stir in the milk and sugar, and simmer uncovered for a further 5 minutes until creamy.
- Remove the cinnamon stick, ladle into bowls, and serve hot.
