  • Zucchini, sliced — 250 g (2 cups)
  • Bell pepper, sliced — 200 g (1 1/2 medium)
  • Red onion, sliced — 100 g (1 small)
  • Olive oil — 45 ml (3 tbsp)
  • Dried oregano — 3 g (1 tsp)
  • Salt — 5 g (1 tsp)
  • Black pepper — 1 g (1/4 tsp)

Method

  1. Preheat oven to 210°C (410°F).
  2. Toss all the vegetables with olive oil, oregano, salt and pepper on a large baking tray.
  3. Spread in a single layer to ensure even roasting.
  4. Roast for 30-35 minutes, turning once halfway, until caramelised and tender.
  5. Serve warm or at room temperature.
