Ingredients

  • - 300 g (2 1/4 cups) white cornmeal
  • - 750 ml (3 cups) water, divided
  • - 4 ripe tomatoes, chopped
  • - 2 red bell peppers, chopped
  • - 1 scotch bonnet chilli
  • - 1 onion, chopped, divided
  • - 3 tbsp vegetable oil
  • - 300 g (10 oz) beef or chicken, cut into chunks
  • - 2 cloves garlic, minced
  • - 1 tsp salt, or to taste
  • - 1 stock cube (optional)

Method

  1. Blend the tomatoes, red peppers, chilli and half the onion into a smooth purée.
  2. Heat oil in a pan, sauté the remaining chopped onion and garlic until fragrant.
  3. Add the meat and brown on all sides, about 6-8 minutes.
  4. Pour in the blended purée, stock cube and salt, and simmer for 25-30 minutes until the sauce thickens and the oil rises to the surface.
  5. Meanwhile, whisk the cornmeal into 250ml (1 cup) of the cold water to form a slurry.
  6. Bring the remaining 500ml (2 cups) water to a boil, whisk in the slurry, and stir continuously over low heat for 10-12 minutes until thick, smooth and elastic.
  7. Serve the pâte hot alongside the tomato-pepper sauce.
