  • - 10 g (2 tsp) Baking powder

  • - 300 ml (1 1/4 cups) Whole milk
  • - 2 Large eggs
  • - 60 g (4 tbsp) Unsalted butter, melted

Method

  1. Preheat the oven to 200°C (400°F) and grease a 9-inch square baking pan.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder and salt.
  3. In a separate bowl, whisk together the milk, eggs and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined, taking care not to overmix.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 20-25 minutes until golden and a toothpick inserted into the centre comes out clean.
  7. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool slightly before slicing.
