- 60 ml (1/4 cup) melted butter
- 60 g (1/2 cup) shredded coconut
Method
- Whisk flour, yeast, sugar and salt together in a large bowl.
- Add warm coconut milk and melted butter, and mix into a soft dough.
- Knead for 8-10 minutes until smooth and elastic, then fold in the shredded coconut.
- Cover and let rise in a warm place for 1 hour, or until doubled.
- Shape into small rolls, place on a baking tray, and let rise a further 20 minutes.
- Bake at 180°C (350°F) for 20-25 minutes until golden brown.
