Pakistani Chicken Biryani

Ingredients
- Basmati rice, soaked for 30 minutes — 550 g (1.2 lb)
- Chicken pieces, bone-in — 1 kg (2.2 lb)
- Onions, sliced — 2
- Yoghurt — 240 g (8.5 oz)
- Tomatoes, chopped — 2
- Garlic, minced — 4 cloves
- Ginger, minced — 2 tbsp
- 2 tbsp (or a mix of whole spices — cinnamon, cloves, cardamom, bay leaf) Biryani masala
- Saffron threads, soaked in warm milk — 1/2 tsp
- Oil — 120 ml (4 fl oz)
- Fresh coriander and mint, chopped
- Salt — to taste
Method
- Fry the sliced onions in oil until deeply golden and crisp; remove and set aside, reserving the oil.
- In the same oil, sauté the garlic and ginger until fragrant.
- Add the chicken and brown lightly, then add the tomatoes, yoghurt, biryani masala and salt, and cook for 15–20 minutes until the chicken is nearly cooked and the sauce has thickened.
- Meanwhile, parboil the soaked rice in salted water with whole spices for about 6–7 minutes until about
- 70% cooked; drain.
- Layer the parboiled rice over the chicken masala in the pot.
- Drizzle with the saffron milk and scatter with fried onions, coriander and mint.
- Cover tightly and cook over very low heat for 20–25 minutes to steam through (dum method).
- Gently mix before serving hot.
