Ingredients

  • Basmati rice — 370 g (13 oz)

  3. Melt the ghee in a saucepan and briefly sauté the rinsed rice for 2 minutes.
  4. Add the water, saffron with its soaking liquid, and salt, and bring to a boil.
  5. Cover and reduce to low heat, cooking for 15–18 minutes until the rice is tender and the liquid absorbed.
  6. Let rest, covered, for 5 minutes, then fluff with a fork before serving.
